At DSs grammar school the vast majority do triple science so 11 GCSEs (12 if they want Further Maths) but the 5% (give or take) that do double science do 10, they don't get the option to pick another GCSE to replace the 3rd science
If I remember correctly all students start off by doing triple science and at the end of year 10 they are culled as such and some are 'downgraded' to double science which is probably why they then do 10 GCSEs as it's too late to choose another one
Whist DS wants to follow a career in politics/economics he was still very keen to do triple science so no regrets here, but I can see where you're coming from
